Chocolate Pots de Creme


Ingredients
  • 9 oz high-quality semisweet chocolate, chopped
  • 1 1/2 cups whole milk
  • 1 cup heavy cream
  • 6 large egg yolks
  • 5 Tbsp granulated sugar
  • 1/4 tsp salt


Directions
Whisk milk, cream, egg yolks, and sugar in a heavy-bottomed saucepan over medium heat.  Cook while stirring constantly until mixture is thick enough to coat the back of a spoon (5-6 minutes).

While still hot, pour the mixture over the chopped chocolate in a blender.  Blend until smooth and divide into serving dishes.  Refrigerate until set (at least 2 hours).
