Cherry Clafouti

Ingredients
  • 1/2 cup flour
  • 2/3 cup sugar, divided
  • 1 1/4 cup milk
  • 3 eggs
  • 1 Tbsp vanilla
  • pinch of salt
  • 12 oz cherries (or other fresh fruit)

Directions
Combine all ingredients except cherries and 1/3 cup of sugar in a blender.  Pour 1/2 of the mixture into a buttered 2qt casserole dish and bake at 350 degrees for 12-15 minutes or until set.

Remove from oven and evenly distribute cherries in the dish and cover with remaining sugar and custard mixture.  Return dish back to the oven and continue baking for 45-55 minutes or until golden brown and puffy.
